
Since Rick was gone last night, it was all about a fast and easy dinner. Breakfast food always fits the bill, so I decided on cinnamon toast and scrambled eggs.
Would you like to hazard a guess as to how many eggs I used? Really, if I didn't make it myself, I wouldn't have believed it.

Yes, you heard right.
That is CRAZY. I started with 10 eggs, thinking it would be more than plenty, but those were gone before I could turn around. As I was making the next batch, I was talking to a close friend who has 7 children, and I scheduled an appointment with her as soon as possible to discuss making meals for a large family.
I feel so unprepared. I didn't have the experience of adding one child at a time, so there has been no "easing into it". In three years I went from 1 child to 5 children, and I'm still stuck on cooking for just a few. There have actually been a couple times in the last few weeks that Rick has come home to no dinner. Not because I didn't make it, but because it was all gone! I obviously need to start figuring out the amounts needed to feed our family. It doesn't help that my babies eat way more than my girls--seriously, it's almost ridiculous. Henry looks like he eats a lot, but don't let Jack fool you--he may be little, but man, can he pack it in!
One other thing that needs to be adjusted? The grocery budget.
Someone might need a second job.

Good thing eggs are pretty cheap! There was a time at home that we pretty much lived on them! You will have a big helper (Rob) come December...we always cook wayyy too much! He'll teach ya. ha
wait till they start having friends over all the time....yikes!!
at least in your family it's the kiddos doing all the eating...lately it's been ME doing it all - hello almost all 16 lbs of grapes are almost gone and I don't think little miss addy stole them all ;)
I at the minimum double everything. A standard pancake recipe gets tripled. I fill my large pans full to the brim of dinner. I also serve bread, rice, rolls, or biscuits with meal that are looking a little sparse. We do Bountiful Baskets and I purchase two every week. We go through pretty much everything. Fruits and veggies are often all-you-can eat. Tonight it was grapes and corn with small panini sandwiches. Almost everyone ate two large cobs of corn, and everyone left full. Good luck!

Ahhhh...this sounds so familiar. Breakfast dinner is what we call it and it is a staple around here when Charlie is gone. I either seem to have way too much or not enough. We need to compare notes :)
That is so funny because my back-up meal when Daddy is gone is "eggs & toast" and if I do 2 eggs per child, we have enough... your boys DO eat a lot! We have to have lots of cheddar cheese in the eggs, but still.

WOW. Just think what your grocery bill will be when the boys are teenagers! Yikes!
Just wait till those babies become preteens. Harris and Winston are costing us a pretty penny. Thank goodness Roman hardly eats!
Growing up on the other end (oldest of 11) I have to wonder what my Mom thought cooking for us! Daniel still things I grocery shop like we have twice as many kids. I guess I just got used to that ;)
